Green Go-Go Smoothie

My aunt Peg used to call her morning cup of coffee her “go-go juice”.  No getting near this mother of 4 boys unless she’d first gotten her morning fix.  Well Peg, I bet my go-go juice gets you further, longer, with less downside.  The green juice “rush” is absolutely addictive.

I make a batch in the evening, store in the fridge in two large mason jars (available at Target, New Leaf, Whole Foods, Amazon, …), and in the morning- shake and serve.  If headed to work, I put the mason jars in a cooler bag with a few ice packs, and bring along my empty silver coffee mug.

One batch = 1 meal, usually breakfast or lunch, sipped until the next mealtime.

  • 3 cups water
  • large bunch greens (spinach, kale, arugula, romaine…)
  • 1/2 large cucumber, peeled (or 3 stalks celery)
  • handful parsley
  • 1-2 lemons, peeled
  • 2″ slice ginger root, peeled
  • 1 apple, peel on
  • 1 banana

Blend all in a Vitamix (or other high-power blender) until smooth.  Store in mason jars in fridge up to 3 days.
