This delish veggie-based hummus can be used as a dip for veggies and crackers, or as a condiment with sandwiches. Give it a try, and let me know if you come up with any interesting variations!!
- 2 zucchini, chopped
- 1/4 cup extra virgin olive oil
- 3/4 cup raw tahini
- 3 cloves garlic
- 1/2 cup fresh lemon juice
- 1/2 TB cumin
- 2 TB nutritional yeast
- 1/4 tsp Muchi curry (optional, available at Whole Foods)
- pinch cayenne (optional)
- sea salt to taste
Blend all ingredients until smooth. Serve chilled or at room temperature.
