Fig Almond Energy Bars


I was thumbing through the most recent issue of Women’s Running Magazine when I came across this recipe for a no-bake energy bar made of pronounceable, real food, and a nice blend of protein, carbs, fiber and healthy fat.  The flavors meld into one awesome-tasting bar.  I don’t think you’ll eat another chemical factory bar after trying something like this.   Here is the recipe…

  • 1 1/2 cups dried mission figs, stemmed
  • 2 cups almond flour
  • 1/2 cup unsweetened dried coconut
  • 1 ripe banana
  • 2 TB pure maple syrup
  • 2 tsp vanilla extract
  • 2 tsp cinnamon
  • 3/4 tsp chili powder (I used a mix of Chipolte and Ancho chili powders)
  • 1/4 tsp sea salt
  • 1/2 cup walnuts, chopped

Place fits in a bowl, cover with warm water and soak for 2 hours.

Drain figs and place them in a food processor along with the rest of the listed ingredients with the exception of the walnuts.  Blend until the mixture begins to clump together, then add walnuts and pulse to mix.

Place mixture in a greased or parchment-lined baking pan (8″ x 8″) and spread in an even layer.  Freeze for 3 hours, then slice into 12 bars.
