Carrot Gingerbread Muffins

If you’re jumping on the Paleo diet bandwagon  (…or not, I highly recommend these dense,   moist, gluten-free, dairy-free muffins.  The original version added 1/2 cup blackstrap molasses, reduced the maple syrup to 1/4 cup and eliminated the shredded coconut.  I made the original version, then topped some of them with Earth Balance Organic Coconut Spread (found in fridge section near butter) and orange zest.  Delish!
