This is one of my favorite protein/veggie staples. I always keep a few tupperware containers of this stuff on hand for the times I come home famished and need to dig into something in a hurry. The nutritional profile is ideal for weight loss- low carb, low fat, high protein and tons of great nutrients.
In a pot or wok- start with 1/2-1 cup Trader Joe’s Low Sodium Veggie Stock, add 1-2 cups diced veggies of choice (broccoli, cauliflower, sweet peppers, garlic, onion, etc…), cook until slightly softened, then add 1 pkg ground white meat turkey, 2 eggs, 1/2 small can chopped diced tomatoes (I use Trader Joe’s Fire Roasted Tomatoes), and 1 tsp. Muchi Curry (available at Whole Foods…soooo good!). Saute until turkey cooked through.
